- 3 tablespoons unsalted butter, divided
- 1 tablespoon olive oil
- ½ cup chicken broth
- ¼ cup heavy cream
- ½ cup shredded cheddar cheese
- 1 tablespoon fresh parsley, chopped
- Optional: Sliced green onions for garnish
Instructions
- Cook the Chicken: In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Season the chicken pieces generously with garlic powder, onion powder, smoked paprika, chili powder, cayenne pepper, salt, and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 6–8 minutes. Remove the chicken from the skillet and set aside on a plate.
- Make the Sauce: In the same skillet, lower the heat to medium. Add the remaining tablespoon of butter and pour in the chicken broth, scraping up any browned bits from the bottom of the pan to add flavor. Stir in the heavy cream and allow the sauce to simmer gently for 3-4 minutes until slightly thickened.
- Combine Chicken and Cheese: Return the cooked chicken to the skillet and stir to coat in the creamy sauce. Sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet with a lid and cook for 2-3 minutes until the cheese is melted and bubbly.
- Garnish and Serve: Remove the skillet from heat and sprinkle with chopped fresh parsley and sliced green onions if using. Serve warm with your choice of mashed potatoes, rice, or crusty bread to enjoy the savory sauce.
