Description

Ingredients

For the Soup:

  • 2 Tablespoons Olive Oil
  • 1/2 Cup Chopped Sweet Onion
  • 3 Garlic Cloves, Minced
  • 1 (28 Ounce) Can Crushed or Diced Tomatoes (See Notes Above)
  • Salt & Pepper To Taste
  • 10 Fresh Basil Leaves
  • 1 Fresh Rosemary Sprig
  • 1 Cup Heavy Cream

For Garnish:

  • Garnish of Choice (See Notes Above)

Instructions

  1. In a medium stockpot, heat the oil over medium heat until hot, then add the onion. Cook until the onion has softened, about 5 minutes and then add the garlic.
  2. Cook another minute or two until fragrant.
  3. Tie the basil together with the rosemary with kitchen twine and add to the pot.
  4. Dump in the canned tomatoes and season with salt and pepper.
  5. Bring mixture to a boil, then reduce heat to a simmer and cook for 20 minutes.
  6. Remove the basil and rosemary from the pot and discard.
  7. Either puree the soup in a blender or use a hand immersion blender to puree the soup until very smooth.
  8. Return the soup to the pot to rewarm and add the cream.
  9. Taste the soup and adjust seasonings as needed.
  10. Serve soup warm with garnish of choice.
