For the French Fries:
- 4 large Floury potatoes (e.g., Russet)
- 2 tablespoons White vinegar
- 1 tablespoon Kosher salt
- Oil as needed Canola or vegetable oil
- Salt for seasoning
Instructions
- Preparation: Peel and cut the floury potatoes into thin 6mm (¼-inch) fries.
- Soaking: Soak the fries in cold water with white vinegar and kosher salt. Bring to a boil, then simmer for 10 minutes.
- Draining and Drying: Drain the fries and let them sit on a towel-lined tray to steam dry completely.
- First Fry: Heat oil in a deep pot to 400°F (205°C). Fry the potatoes in small batches for 50-60 seconds. Drain and set aside for at least 30 minutes to cool completely.
- Second Fry: Reheat the oil to 400°F (205°C) and fry the cooled fries in small batches for about 4 minutes. Drain and toss immediately with salt in a large bowl. Serve hot.
Notes
- For extra flavor, you can sprinkle some grated Parmesan cheese or chopped parsley over the hot fries.
- Be cautious when frying to avoid oil splatters.
