Description

These overnight yeasted waffles are perfectly golden and crisp on the outside, light and airy inside. Topped with crispy bacon, a pat of melting butter, and a generous drizzle of maple syrup, they’re the ultimate breakfast indulgence.

For the Waffles (Overnight Yeasted):

  • 2 cups all-purpose flour
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 1/2 tsp instant yeast
  • 1 3/4 cups whole milk (lukewarm)
  • 1/2 cup unsalted butter, melted and cooled
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda (added before cooking)

Toppings:

  • 8 slices crispy bacon
  • 4 tbsp butter
  • Maple syrup (to taste)

Instructions

  1. Mix the batter (night before): In a large bowl, whisk flour, sugar, salt, and yeast. Stir in milk and melted butter. Cover loosely and let rest at room temp overnight.
  2. Finish the batter: In the morning, whisk in eggs, vanilla, and baking soda until smooth.
  3. Cook the waffles: Preheat waffle iron. Lightly grease if needed. Pour batter and cook until crisp and deeply golden (about 3–5 minutes depending on your iron).
  4. Prepare toppings: Cook bacon until crisp. Set aside. Have butter and warm maple syrup ready.
  5. Serve: Stack waffles on a plate, top with butter, strips of bacon, and drizzle with syrup.
