For the Waffles (Overnight Yeasted):
- 2 cups all-purpose flour
- 1 tbsp sugar
- 1/2 tsp salt
- 1 1/2 tsp instant yeast
- 1 3/4 cups whole milk (lukewarm)
- 1/2 cup unsalted butter, melted and cooled
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 tsp baking soda (added before cooking)
Toppings:
- 8 slices crispy bacon
- 4 tbsp butter
- Maple syrup (to taste)
Instructions
- Mix the batter (night before): In a large bowl, whisk flour, sugar, salt, and yeast. Stir in milk and melted butter. Cover loosely and let rest at room temp overnight.
- Finish the batter: In the morning, whisk in eggs, vanilla, and baking soda until smooth.
- Cook the waffles: Preheat waffle iron. Lightly grease if needed. Pour batter and cook until crisp and deeply golden (about 3–5 minutes depending on your iron).
- Prepare toppings: Cook bacon until crisp. Set aside. Have butter and warm maple syrup ready.
- Serve: Stack waffles on a plate, top with butter, strips of bacon, and drizzle with syrup.
