Description

Golden and savory, these crispy waffles are loaded with diced ham and made extra tender with a buttermilk-style batter—perfectly finished with a dollop of herbed cream cheese or sour cream for an irresistible breakfast or brunch.

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 350g whey or milk + 1 tbsp lemon juice (let sit for 5 minutes)

Instructions

  1. In a large bowl, whisk together flour, cornmeal, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix eggs, buttermilk (or whey substitute), and melted butter.
  3. Combine wet and dry ingredients until just incorporated, then fold in diced ham.
  4. Preheat your waffle iron and lightly grease if needed.
  5. Pour the batter into the waffle iron and cook until golden brown and crispy.
