Description

Golden brown zucchini fritters flavored with Indian spices, perfectly paired with a refreshing herbed yogurt dip — ideal as an appetizer, snack, or savory side.


Ingredients

  • 2 medium courgettes (zucchini), grated
  • 1/2 tsp salt
  • 1 small red onion, finely chopped
  • 2 green chillies, finely chopped (optional)
  • 1 tbsp fresh coriander, chopped
  • 1/2 tsp cumin seeds
  • 1/2 tsp ground turmeric
  • 1/2 tsp garam masala
  • 1/4 tsp chilli powder
  • 100g gram flour (chickpea flour)
  • 45 tbsp water (as needed)
  • Oil for shallow frying
  • 150g vegan plain yoghurt (coconut or soy-based)
  • 1 small garlic clove, minced
  • 2 tbsp fresh mint, finely chopped
  • 1 tbsp fresh coriander, finely chopped
  • Juice of 1/2 lime
  • Salt to taste

Instructions

  1. Sprinkle salt over the grated courgettes and let sit for 10 minutes. Squeeze out as much liquid as possible using a clean cloth or paper towel.
  2. In a mixing bowl, combine the courgettes, red onion, chillies (if using), coriander, cumin seeds, turmeric, garam masala, chilli powder, and gram flour.
  3. Add water gradually and mix until a thick batter forms that holds its shape.
  4. Heat oil in a frying pan over medium heat. Drop spoonfuls of batter into the pan, flattening slightly. Cook 3–4 minutes on each side until crisp and golden. Drain on paper towels.
  5. Air fryer option: cook at 200°C for 12–15 minutes, flipping halfway.
  6. Oven option: bake at 200°C (180°C fan) for 20–25 minutes, flipping halfway.
  7. For the dip, mix the yogurt, garlic, mint, coriander, lime juice, and salt until smooth.
  8. Serve the fritters warm with a generous side of mint yogurt dip.

Notes

  • Ensure you squeeze out excess moisture from the zucchini to prevent soggy fritters.
  • Use a non-dairy yogurt for a vegan dip.
  • The batter should be thick enough to hold shape when spooned into the pan.
  • Adjust spices to taste based on heat preference.
