Description

These Crustless Mini Quiches are a delightful blend of Lorraine and goat cheese with onions and tomatoes, perfect for a dinner party appetizer or a flavorful snack.

Egg Mixture:

  • 2 eggs
  • 1 tablespoon sour cream
  • 3/4 cup reduced-fat milk (200 ml)
  • 1/3 cup cornstarch (about 40 grams)
  • 1/3 cup diced bacon (about 50 grams)
  • 1/3 cup shredded cheese (about 40 grams)

Filling Options:

  • 1 small log fresh goat cheese
  • Cherry tomatoes
  • 1/2 onion, chopped

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (180°C) and cook the chopped onion in butter.
  2. Prepare the egg mixture: Whisk together eggs, cornstarch, milk, sour cream, salt, pepper, and shredded cheese.
  3. Divide the mixture: Split the mixture in half. Add bacon and some cooked onions to one half, and goat cheese, cherry tomatoes, and remaining onions to the other half.
  4. Bake: Pour the mixtures into muffin tins and bake for 20-25 minutes with convection heat.
