Egg Mixture:
- 2 eggs
- 1 tablespoon sour cream
- 3/4 cup reduced-fat milk (200 ml)
- 1/3 cup cornstarch (about 40 grams)
- 1/3 cup diced bacon (about 50 grams)
- 1/3 cup shredded cheese (about 40 grams)
Filling Options:
- 1 small log fresh goat cheese
- Cherry tomatoes
- 1/2 onion, chopped
Instructions
- Preheat the oven: Preheat the oven to 350°F (180°C) and cook the chopped onion in butter.
- Prepare the egg mixture: Whisk together eggs, cornstarch, milk, sour cream, salt, pepper, and shredded cheese.
- Divide the mixture: Split the mixture in half. Add bacon and some cooked onions to one half, and goat cheese, cherry tomatoes, and remaining onions to the other half.
- Bake: Pour the mixtures into muffin tins and bake for 20-25 minutes with convection heat.
