- Pastel gel food coloring (pink, blue, yellow, green)
- 1 cup sweetened shredded coconut (for rolling)
Instructions
- MIX THE COCONUT FILLING: In a large mixing bowl, combine the sweetened shredded coconut, sweetened condensed milk, vanilla extract, and salt. Stir until thick and sticky.
- SHAPE THE TRUFFLES: Scoop and roll into balls, then chill until firm.
- MELT AND COLOR THE COATING: Melt white candy melts, color, and dip the truffles.
- DIP THE TRUFFLES: Coat each truffle and remove excess coating.
- ADD THE COCONUT FINISH: Roll in shredded coconut before the coating sets.
