FOR THE COATING

  • 12 to 16 ounces white candy melts or white chocolate
  • Pastel gel food coloring (pink, blue, yellow, green)
  • 1 cup sweetened shredded coconut (for rolling)

Instructions

  1. MIX THE COCONUT FILLING: In a large mixing bowl, combine the sweetened shredded coconut, sweetened condensed milk, vanilla extract, and salt. Stir until thick and sticky.
  2. SHAPE THE TRUFFLES: Scoop and roll into balls, then chill until firm.
  3. MELT AND COLOR THE COATING: Melt white candy melts, color, and dip the truffles.
  4. DIP THE TRUFFLES: Coat each truffle and remove excess coating.
  5. ADD THE COCONUT FINISH: Roll in shredded coconut before the coating sets.

Notes
