For the Dough:
- 2 cups chicken broth (from cooking the chicken)
- 2 tbsp butter
- 2 cups all-purpose flour
For the Filling:
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 cups cooked, shredded chicken breast
- 2 tbsp cream cheese or requeijão
- Salt and black pepper to taste
- 1 tbsp chopped parsley (optional)
For Breading:
- 2 eggs, beaten
- 2 cups bread crumbs
- Oil, for deep frying
Instructions
- For the Dough: In a medium pot, bring the chicken broth and butter to a boil. Add the flour, stirring until a smooth dough forms. Let cool.
- For the Filling: Sauté onion and garlic. Add chicken, cream cheese, salt, pepper, and parsley. Cook until creamy. Set aside to cool.
- Assembly: Flatten dough, add filling, mold into teardrop shape. Dip in egg, coat with bread crumbs.
- Frying: Heat oil to 350°F (175°C). Fry coxinhas until golden brown, about 3-5 minutes.
- Serve: Drain on paper towels and serve warm.
Notes
- For a twist, add diced jalapeños to the filling for a spicy kick.
- Make sure the oil is hot enough to ensure a crispy exterior.
- These can also be baked in the oven for a healthier alternative.
