Description

Easy Mini No Bake Key Lime Pie is a delightful dessert that requires no baking. These cute individual frozen pies are a mini version of the classic key lime pie, perfect for summer.


Ingredients

Graham Cracker Crust:

  • 1 & 1/2 cups graham cracker crumbs or 1 sleeve graham crackers
  • 4 ounces unsalted butter, melted

Filling:

  • 8 oz cream cheese, softened
  • 14 ounce can sweetened condensed milk
  • 3/4 cup key lime juice, fresh squeezed
  • 8 oz whipped topping, plus more for garnish

Instructions

  1. Graham Cracker Crust: Mix the graham cracker crumbs with the melted butter, and set aside.
  2. Filling: Cream the room temperature cream cheese until smooth. Add sweetened condensed milk and mix until smooth. Add key lime juice and mix until smooth. Fold in whipped topping until no streaks remain.
  3. Take individual silicone cups or paper cupcake liners and fill them with the key lime pie filling about ¾ of the way up. Top with graham cracker crumbs. Freeze for 4 hours or until set. Unmold pies carefully with warm water if needed. Serve with whipped topping and key lime slices.

Notes

  • For best results, use fresh key lime juice.
