Ingredients
Scale
Chicken and Stuffing
- 2 boneless, skinless chicken breasts
- 4 ounces brie cheese, rind removed and cut into small pieces
- 1/4 cup chopped fresh parsley
Cranberry Sauce
- 1/2 cup fresh cranberries
- 1/4 cup honey
- 1/4 cup orange juice
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
Seasoning and Topping
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup panko breadcrumbs
- 1 tablespoon butter, melted
Instructions
- Preheat and Prepare: Preheat your oven to 375°F. Line a baking dish with parchment paper or lightly grease it to prevent sticking.
- Make Cranberry Sauce: In a saucepan over medium heat, combine the cranberries, honey, orange juice, cinnamon, and ginger. Cook until the cranberries burst and the sauce thickens, about 8 to 10 minutes. Remove from heat and set aside to cool slightly.
- Prep Chicken: Slice a pocket into each chicken breast without cutting all the way through. Season both inside and outside of the chicken breasts with salt and pepper.
- Stuff Chicken: Fill each chicken pocket with pieces of brie cheese, a spoonful of cranberry sauce, and chopped fresh parsley.
- Add Topping: In a small bowl, mix the panko breadcrumbs with melted butter. Press the breadcrumb mixture onto the top of each stuffed chicken breast to form a crispy crust.
- Bake: Place the stuffed chicken breasts in the prepared baking dish and bake in the preheated oven for 25 to 30 minutes, or until the chicken is fully cooked and the topping is golden brown.
- Rest and Serve: Allow the chicken to rest for a few minutes after baking. Spoon any leftover cranberry sauce over the chicken and garnish with extra parsley before serving.
Notes
- Cranberry Brie Stuffed Chicken pairs beautifully with roasted Brussels sprouts, a fresh green salad, or a medley of roasted root vegetables.
- For a festive touch, serve with cranberry-orange relish or sautéed spinach.
- To complement the rich flavors, pair the dish with a crisp white wine like Sauvignon Blanc or a light, fruity red such as Pinot Noir.
