Meatballs:

  • 1 lb (450g) ground beef (90% lean) or ground lamb
  • 1/2 cup (60g) plain or Italian seasoned breadcrumbs
  • 1 large egg, room temperature
  • 1/3 cup (15g) fresh flat-leaf parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 small onion, finely chopped
  • 1 large lemon, zested and juiced
  • Salt and black pepper, to taste

Lemon Sauce:

  • 1 1/2 cups (360ml) low-sodium chicken broth (or vegetable broth)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C). Prepare ingredients.
  2. Mix meatball ingredients: In a large bowl, combine ground meat, breadcrumbs, egg, parsley, garlic, onion, lemon zest, oregano, salt, and pepper. Mix well.
  3. Shape meatballs: Form mixture into golf ball-sized meatballs. Place on a plate.
  4. Brown meatballs: Brown meatballs in olive oil in a skillet. Remove and set aside.
  5. Prepare sauce: In the same skillet, add broth, lemon zest, and juice. Simmer briefly.
  6. Cook meatballs in sauce: Return meatballs to skillet. Simmer covered until cooked through and sauce thickens.
  7. Adjust seasoning and serve: Taste sauce, adjust seasoning as needed. Garnish and serve with sides.
