Dry Ingredients:
- 1 cup old-fashioned oats (or 3/4 cup oat flour)
- 1 scoop vanilla protein powder (25-30g)
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 pinch salt
Wet Ingredients:
- 2 large eggs
- 1/2 cup milk or milk alternative
- 1 tablespoon maple syrup (optional)
- 1 teaspoon vanilla extract
- 1 spray Cooking spray or coconut oil
Instructions
- Preparation: Add the oats, protein powder, baking powder, cinnamon, and salt to your blender. Blend until finely ground. In a separate bowl, whisk eggs, milk, maple syrup, and vanilla. Combine wet and dry ingredients. Rest batter. Adjust thickness.
- Cooking: Heat a pan, pour batter, cook until bubbles form, flip, and cook until golden brown. Keep warm while cooking the rest.
Notes
- For a smoother batter, use oat flour instead of whole oats.
- Room temperature eggs mix better in the batter.
