Description

Discover the magic of Forgotten Chicken and Rice, a comforting one-dish meal that effortlessly combines creamy flavors with tender chicken. Perfect for busy weeknights or family gatherings, this dish requires minimal prep time and bakes to a flavorful, hearty meal without the hassle.

Ingredients

Scale

Chicken & Rice

  • 1 lb boneless skinless chicken breasts
  • 2 cups Minute rice (white or brown)

Soup Mixture

  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) water (use the empty soup can to measure)

Seasoning & Fat

  • 1 tbsp butter (for greasing)
  • 1 envelope Lipton onion soup mix

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter to prevent sticking.
  2. Mix Soups and Rice: In a large bowl, combine the cream of chicken soup, cream of mushroom soup, water, and Minute rice. Stir well until everything is fully blended.
  3. Assemble the Dish: Pour the soup and rice mixture into the prepared baking dish. Lay the boneless skinless chicken breasts evenly on top of the rice mixture.
  4. Season the Chicken: Sprinkle the Lipton onion soup mix evenly over the chicken breasts to add flavor.
  5. Bake Covered: Cover the dish tightly with aluminum foil and bake in the preheated oven for 1 to 1½ hours, until the chicken is fully cooked through and rice is tender.
  6. Optional Cheese Addition: For a cheesy topping, uncover the dish during the last 10 minutes of baking and sprinkle shredded cheese over the chicken before returning to the oven.
  7. Rest and Serve: Remove from oven and let the dish stand for 5 minutes to let the flavors meld before serving.

Notes

  • You can use either white or brown Minute rice based on your preference.
  • Covering the dish tightly helps to steam the rice and keep the chicken moist.
  • Leftovers keep well and can be refrigerated for up to 3 days.
  • Optional shredded cheese can be added for extra richness.
