Chicken & Rice
- 1 lb boneless skinless chicken breasts
- 2 cups Minute rice (white or brown)
Soup Mixture
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) water (use the empty soup can to measure)
Seasoning & Fat
- 1 tbsp butter (for greasing)
- 1 envelope Lipton onion soup mix
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter to prevent sticking.
- Mix Soups and Rice: In a large bowl, combine the cream of chicken soup, cream of mushroom soup, water, and Minute rice. Stir well until everything is fully blended.
- Assemble the Dish: Pour the soup and rice mixture into the prepared baking dish. Lay the boneless skinless chicken breasts evenly on top of the rice mixture.
- Season the Chicken: Sprinkle the Lipton onion soup mix evenly over the chicken breasts to add flavor.
- Bake Covered: Cover the dish tightly with aluminum foil and bake in the preheated oven for 1 to 1½ hours, until the chicken is fully cooked through and rice is tender.
- Optional Cheese Addition: For a cheesy topping, uncover the dish during the last 10 minutes of baking and sprinkle shredded cheese over the chicken before returning to the oven.
- Rest and Serve: Remove from oven and let the dish stand for 5 minutes to let the flavors meld before serving.
Notes
- You can use either white or brown Minute rice based on your preference.
