- Preheat the oven: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Beat the egg whites: In a clean, dry bowl, beat egg whites with salt until foamy. Gradually add sugar, beating until stiff, glossy peaks form.
- Add flavor and chocolate: Gently fold in vanilla extract and chocolate chips, being careful not to deflate the mixture.
- Shape the cookies: Drop spoonfuls of the meringue onto the prepared baking sheet.
- Bake and forget: Place the baking sheet in the oven, then immediately turn the oven off. Leave cookies in the closed oven for 6–8 hours or overnight.
- Remove and serve: Once fully set and cooled, remove cookies from the oven and enjoy.
