Instructions
- Prepare the Rice: If you don’t have leftover rice, cook fresh rice and allow it to cool completely to prevent it from becoming mushy during stir-frying.
- Scramble the Eggs: Whisk the eggs with a splash of soy sauce, then scramble them in a hot pan until just set. Set the eggs aside and chop into smaller pieces.
- Sauté Aromatics and Vegetables: Heat the oil in a skillet. Stir-fry the minced garlic and ginger for about 30 seconds until fragrant. Add the mixed vegetables and cook until tender-crisp.
