Description

Freakin’ Fantastic Fried Rice is a vibrant and customizable Asian-inspired dish that’s perfect for busy weeknights. Using leftover or day-old rice for the best texture, this flavorful fried rice combines scrambled eggs, sautéed mixed vegetables, and a savory soy sauce seasoning to deliver a satisfying meal that easily beats takeout.

Ingredients

Scale

For the Freakin’ Fantastic Fried Rice

  • 4 cups leftover cooked rice (day-old rice is preferable)
  • 3 large eggs, whisked well before scrambling
  • 3 tablespoons soy sauce (adjust to taste)
  • 2 tablespoons vegetable oil or sesame oil
  • 2 cups mixed vegetables (peas, carrots, corn, etc.)
  • 2 cloves garlic, minced (optional)
  • 1 inch ginger, minced (optional)
  • 2 stalks green onions, sliced (optional)

Instructions

  1. Prepare the Rice: If you don’t have leftover rice, cook fresh rice and allow it to cool completely to prevent it from becoming mushy during stir-frying.
  2. Scramble the Eggs: Whisk the eggs with a splash of soy sauce, then scramble them in a hot pan until just set. Set the eggs aside and chop into smaller pieces.
  3. Sauté Aromatics and Vegetables: Heat the oil in a skillet. Stir-fry the minced garlic and ginger for about 30 seconds until fragrant. Add the mixed vegetables and cook until tender-crisp.
  4. Stir-Fry the Rice: Add the cooled cooked rice to the skillet and break up any clumps using your spatula. Stir-fry the rice for several minutes until it’s heated through evenly.
  5. Combine Ingredients: Add the chopped scrambled eggs and soy sauce to the rice and vegetable mixture. Toss thoroughly to combine all components well.
  6. Finish Cooking: Continue stir-frying everything together for another 2-3 minutes until the fried rice is hot and fragrant. Garnish with sliced green onions if desired and serve immediately.

Notes

  • Use day-old rice for the best texture and to avoid mushy fried rice.
  • Adjust soy sauce quantity according to your taste preference and salt tolerance.
  • Feel free to customize the mixed vegetables based on what you have on hand.
  • Garnish with sliced green onions or add other fresh herbs for an extra burst of flavor.
  • For added protein, you can include diced cooked chicken, shrimp, or tofu.
