These glazed baked banana donuts are moist, tender, and bursting with ripe banana flavor. Topped with a delightful cinnamon-vanilla glaze, these treats offer a simple and delicious way to enjoy a cozy snack without the need for deep-frying.


Ingredients

For the Donuts:

  • 1 cup (130g) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 large ripe banana, mashed (about 1/2 cup)
  • 1/3 cup (65g) brown sugar
  • 1 large egg
  • 1/4 cup (60ml) milk
  • 1/4 cup (60ml) vegetable oil or melted butter
  • 1 tsp vanilla extract

For the Glaze:

  • 1 cup (120g) powdered sugar
  • 23 tbsp milk
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat & Prepare: Preheat oven to 350°F (175°C). Lightly grease a donut pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. Combine Wet Ingredients: In another bowl, whisk together mashed banana, brown sugar, egg, milk, oil, and vanilla until smooth.
  4. Make the Batter: Gently fold the dry ingredients into the wet mixture just until combined — do not overmix.
  5. Bake: Spoon or pipe batter into prepared donut pan, filling each about ¾ full. Bake for 10–12 minutes or until a toothpick comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack.
  6. Make the Glaze: In a small bowl, whisk all glaze ingredients until smooth. Dip cooled donuts into glaze and let set.

Notes

  • For a nutty twist, fold in ¼ cup chopped walnuts or pecans.
  • You can substitute part of the flour with whole wheat flour for a wholesome version.
  • Use a ziplock bag with the tip snipped off for easy batter piping.
