For the Donuts:
- 1 cup (130g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1 large ripe banana, mashed (about 1/2 cup)
- 1/3 cup (65g) brown sugar
- 1 large egg
- 1/4 cup (60ml) milk
- 1/4 cup (60ml) vegetable oil or melted butter
- 1 tsp vanilla extract
For the Glaze:
- 1 cup (120g) powdered sugar
- 2–3 tbsp milk
- 1/4 tsp cinnamon
- 1/2 tsp vanilla extract
Instructions
- Preheat & Prepare: Preheat oven to 350°F (175°C). Lightly grease a donut pan.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Combine Wet Ingredients: In another bowl, whisk together mashed banana, brown sugar, egg, milk, oil, and vanilla until smooth.
- Make the Batter: Gently fold the dry ingredients into the wet mixture just until combined — do not overmix.
- Bake: Spoon or pipe batter into prepared donut pan, filling each about ¾ full. Bake for 10–12 minutes or until a toothpick comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack.
- Make the Glaze: In a small bowl, whisk all glaze ingredients until smooth. Dip cooled donuts into glaze and let set.
Notes
- For a nutty twist, fold in ¼ cup chopped walnuts or pecans.
- You can substitute part of the flour with whole wheat flour for a wholesome version.
- Use a ziplock bag with the tip snipped off for easy batter piping.
