Description

  • 1 teaspoon vanilla extract
  • 3/4 cup chopped pecans (plus more for topping)
  • 3/4 cup dried cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper for easy removal.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In a large mixing bowl, whisk oil, brown sugar, and granulated sugar until combined. Add eggs, pumpkin puree, milk, and vanilla; whisk until smooth.
  4. Gradually add dry ingredients into wet, stirring just until combined. Fold in pecans and cranberries.
  5. Pour batter into the prepared loaf pan and smooth the top. Sprinkle with extra pecans if desired.
  6. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Use fresh cranberries for a more tart contrast if preferred.
  • Wrap tightly and store at room temperature for up to 3 days or refrigerate for longer shelf life.
