Description

Gozleme is a traditional Turkish savory flatbread stuffed with a variety of fillings such as cheese, spinach, or meat. The dough is rolled thin, filled, folded, and then grilled until golden and delicious. Brushed with butter for extra flavor, it is a comforting and versatile dish perfect for any meal.

Ingredients

Scale

Dough

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup warm water
  • 1 tablespoon olive oil

Fillings

  • 1 cup crumbled feta cheese (or any cheese of choice)
  • 1 cup fresh spinach, washed and chopped
  • 1/2 cup cooked ground beef or lamb (optional meat filling)
  • 1 small onion, finely chopped (optional for meat filling)
  • Salt and pepper to taste

For Cooking

  • Butter, melted for brushing

Instructions

  1. Prepare the dough: In a large bowl, mix the flour and salt. Gradually add warm water and olive oil, kneading until you get a smooth, elastic dough. Cover and let it rest for 30 minutes.
  2. Prepare the filling: Depending on your choice, either crumble the cheese, sauté spinach lightly, or cook the ground meat with onions and season with salt and pepper.
  3. Roll the dough thin: Divide the rested dough into equal portions. On a lightly floured surface, roll out each portion very thin, almost transparent.
  4. Add the filling: Spread your chosen filling evenly over one half of the dough circle, leaving a small border around the edges.
  5. Fold and seal: Fold the dough over the filling to create a half-moon shape. Press and seal the edges firmly to prevent filling from leaking during grilling.
  6. Grill the flatbread: Heat a grill pan or skillet over medium heat. Place the gozleme on the hot surface and cook for about 3-4 minutes on each side or until both sides are golden brown and crisp.
  7. Brush with butter: Remove from heat and immediately brush the cooked gozleme with melted butter for extra flavor and a shiny finish.
  8. Cut and serve: Cut the gozleme into slices and serve warm as a delicious snack or light meal.

Notes

  • You can customize the filling to your preference, using other vegetables like mushrooms or potatoes.
  • If you prefer a vegan version, skip the cheese and meat and fill with spiced vegetables or lentils.
  • Using a non-stick skillet or cast iron grill pan works best for even cooking.
  • Resting the dough is important for elasticity and easier rolling.
  • Brush with garlic butter for an extra savory touch.
