For the Meatballs:

  • 1 lb (450g) ground beef (90% lean) or ground lamb
  • ½ cup (60g) plain or Italian seasoned breadcrumbs
  • 1 large egg, room temperature
  • â…“ cup (15g) fresh flat-leaf parsley, chopped
  • 3 cloves garlic, minced
  • ½ small onion, finely chopped
  • 1 large lemon, zested and juiced
  • Salt and black pepper, to taste

For the Lemon Sauce:

  • 1½ cups (360ml) low-sodium chicken broth (or vegetable broth)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C). Prepare the ingredients – chop onion and parsley, mince garlic, and zest and juice the lemon.
  2. Prepare the Meatballs: In a large bowl, mix together ground beef, breadcrumbs, egg, parsley, garlic, onion, half the lemon zest, oregano, salt, and pepper. Shape into meatballs.
  3. Brown the Meatballs: Brown the meatballs in a skillet. Remove and set aside.
  4. Make the Lemon Sauce: In the same skillet, add chicken broth, remaining lemon zest, and lemon juice. Simmer and return meatballs to the skillet.
  5. Simmer: Cover and simmer the meatballs in the sauce until cooked through.
  6. Adjust Seasoning: Taste the sauce and adjust salt and pepper as needed. Garnish with parsley and serve hot.

Notes

  • These meatballs can be served with rice, quinoa, or a Greek salad for a complete meal.
  • For a richer sauce, you can add a splash of white wine to the lemon sauce.
