- 2 chicken breasts, cooked and shredded
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup shredded lettuce
- 1 cup red cabbage slaw or coleslaw mix
- 1 small carrot, julienned
- 1/4 red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 1/2 cup Greek yogurt or garlic sauce
- Optional: fries and extra dipping sauce for serving
Instructions
- Heat olive oil in a pan over medium heat. Add shredded chicken, paprika, garlic powder, salt, and pepper. Sauté for 2–3 minutes until heated through and seasoned.
- Warm pita breads slightly in a skillet or on a grill for 1–2 minutes per side to make them pliable.
- Fill each pita with shredded lettuce, slaw or coleslaw mix, carrots, red onion, parsley, and the warm chicken mixture.
- Add a dollop of Greek yogurt or garlic sauce inside each pita.
- Grill the stuffed pitas in a panini press or grill pan for 1–2 minutes until grill marks form and the sandwich is warmed through.
- Serve hot with fries and extra dipping sauce on the side.
