  • 2 Pounds Yellow Potatoes (Baby or Full Size, Cut Into 1 1/2-inch Pieces)

Seasoning:

  • 3 Tablespoons Olive Oil
  • 3 Garlic Cloves, Minced
  • 1 Tablespoon Italian Seasoning
  • Salt & Pepper to Taste

Finishing Touches:

  • 1/3 Cup Grated Parmesan Cheese
  • 4 Tablespoons Finely Chopped Fresh Parsley

Instructions

  1. Preheat Grill: Preheat the grill to medium-high heat.
  2. Cut Potatoes: Halve baby potatoes or cut full-sized potatoes into 1 1/2-inch pieces.
  3. Coat Potatoes: In a bowl, combine potatoes, olive oil, garlic, Italian seasoning, salt, and pepper; toss to coat well.
  4. Prepare Foil Packets: Divide the seasoned potatoes among 5 sheets of heavy-duty aluminum foil; fold and enclose to create packets.
  5. Grill Potatoes: Place the foil packets on the grill and cook for 20-25 minutes, turning halfway through until potatoes are tender.
