Description

These Grilled Garlic Parmesan Potatoes are a delicious side dish perfect for any barbecue or cookout. Tender potatoes seasoned with garlic, Italian herbs, and Parmesan cheese, then grilled to perfection.


Ingredients

Potatoes:

  • 2 Pounds Yellow Potatoes (Either Baby or Full Size Cut Into 1 1/2-inch Pieces)

Seasonings:

  • 3 Tablespoons Olive Oil
  • 3 Garlic Cloves, Minced
  • 1 Tablespoon Italian Seasoning
  • Salt & Pepper To Taste

Finishing Touches:

  • 1/3 Cup Grated Parmesan Cheese
  • 4 Tablespoons Finely Chopped Fresh Parsley

Instructions

  1. Preheat grill to medium high heat. Cut baby potatoes in half, or cut full sized potatoes into 1 1/2-inches.
  2. Place potatoes, olive oil, garlic, Italian seasoning, salt and pepper and toss well.
  3. Divide the potatoes between 5 sheets heavy duty aluminum foil.
  4. Fold the sides over and enclose to create packages.
  5. Place foil packs on grill, and cook 20 to 25 minutes turning halfway. Cook until potatoes are tender when pierced with a knife.
  6. Open packages, dump into a bowl and sprinkle with grated Parmesan cheese and parsley.
  7. Serve hot and enjoy!
