Description

A sweet and smoky twist on the classic Caprese, this Grilled Peach Caprese Salad features juicy grilled peach slices layered with creamy mozzarella, fresh tomatoes, and fragrant basil. Drizzled with balsamic glaze, it’s a summer showstopper bursting with color and flavor.

Ingredients

Units Scale
  • 2 ripe peaches, halved, pitted, and sliced
  • 2 large tomatoes, sliced
  • 8 oz fresh mozzarella, sliced
  • 1/4 cup fresh basil leaves
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • Balsamic glaze, for drizzling

Instructions

  1. Preheat a grill or grill pan to medium heat. Brush peach slices with olive oil.
  2. Grill peaches for 1–2 minutes per side until grill marks appear and peaches are slightly softened.
  3. On a serving platter, alternate layers of grilled peach, tomato, mozzarella, and basil.
  4. Season with salt and freshly ground black pepper.
  5. Drizzle with balsamic glaze just before serving.

Notes

  • This salad is best served fresh and slightly warm, making it a great side dish for summer BBQs.
  • For a slightly sweeter twist, drizzle honey over the salad along with the balsamic glaze.
  • To make the salad more filling, consider adding grilled chicken or a scoop of quinoa.
