- 2 ripe peaches, halved, pitted, and sliced
- 2 large tomatoes, sliced
- 8 oz fresh mozzarella, sliced
- 1/4 cup fresh basil leaves
- 1 tbsp olive oil
- Salt and black pepper, to taste
- Balsamic glaze, for drizzling
Instructions
- Preheat a grill or grill pan to medium heat. Brush peach slices with olive oil.
- Grill peaches for 1–2 minutes per side until grill marks appear and peaches are slightly softened.
- On a serving platter, alternate layers of grilled peach, tomato, mozzarella, and basil.
- Season with salt and freshly ground black pepper.
- Drizzle with balsamic glaze just before serving.
