- 4 bratwurst or Italian sausages
- 4 brioche or hot dog buns
- 1 large yellow onion, sliced into rings
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar (optional)
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
- Ketchup, mustard, or preferred condiments
Instructions
- Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.
- In a skillet over medium heat, add olive oil and sliced onions. Cook for 10–15 minutes, stirring occasionally, until soft and caramelized.
- Add a splash of balsamic vinegar near the end if using, and season with salt and black pepper.
- Grill the sausages directly over the heat, turning occasionally, for 10–12 minutes until fully cooked and charred on the outside.
- Lightly toast the buns on the grill for 1–2 minutes until golden and slightly crisp.
- Place each sausage into a toasted bun and top with caramelized onions.
- Garnish with chopped parsley if desired and serve with your choice of condiments.

- Use sweet onions for a deeper caramelized flavor.
- Try beer-braising the sausages before grilling for extra depth.
