  • 1 yellow onion, diced
  • 2 tbsp olive oil, divided
  • 1 taco seasoning packet (or 2 tbsp homemade)
  • Salt and pepper to taste

  • 2 medium sweet potatoes, peeled and diced
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

For Serving:

  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tbsp hot honey

Instructions

  1. Preheat oven to 400°F: Toss sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast on a baking sheet for 40–45 minutes until caramelized.
  2. Cook Beef: In a skillet over medium heat, add half of the olive oil and cook diced onion until softened (about 5 minutes). Add ground beef and taco seasoning; cook until browned.
  3. Assemble Bowls: Layer roasted sweet potatoes first, followed by seasoned beef. Top with avocado slices and cottage cheese.
  4. Drizzle Honey: Drizzle hot honey over each bowl before serving.
