Bell Peppers:

  • 4 large bell peppers (any color)

Ground Turkey Mixture:

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup cooked brown rice
  • 1 cup canned diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Toppings:

  • 1 cup shredded mozzarella or cheddar cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C). Slice tops off bell peppers and remove seeds and membranes.
  2. Sauté onion and garlic: Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté 2-3 minutes.
  3. Cook ground turkey: Add ground turkey to the skillet, breaking it up as it cooks until browned.
  4. Combine ingredients: Stir in cooked rice, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Let simmer for 5 minutes.
  5. Stuff peppers: Fill each bell pepper with the turkey mixture and place in a baking dish.
  6. Bake: Cover with foil and bake for 30 minutes. Remove foil, top each pepper with cheese, and bake uncovered for another 10 minutes until cheese is melted and bubbly.
  7. Garnish and serve: Garnish with parsley before serving.
