Bell Peppers:
- 4 large bell peppers (any color)
Ground Turkey Mixture:
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 cup cooked brown rice
- 1 cup canned diced tomatoes, drained
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Toppings:
- 1 cup shredded mozzarella or cheddar cheese
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven: Preheat oven to 375°F (190°C). Slice tops off bell peppers and remove seeds and membranes.
- Sauté onion and garlic: Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté 2-3 minutes.
- Cook ground turkey: Add ground turkey to the skillet, breaking it up as it cooks until browned.
- Combine ingredients: Stir in cooked rice, diced tomatoes, Italian seasoning, paprika, salt, and pepper. Let simmer for 5 minutes.
- Stuff peppers: Fill each bell pepper with the turkey mixture and place in a baking dish.
- Bake: Cover with foil and bake for 30 minutes. Remove foil, top each pepper with cheese, and bake uncovered for another 10 minutes until cheese is melted and bubbly.
- Garnish and serve: Garnish with parsley before serving.
