Description

Delicious and easy-to-make Ham and Egg Cups baked in a muffin pan, perfect for a protein-packed breakfast or brunch. Each cup features a savory ham slice, melted cheddar cheese, and a baked egg seasoned with salt, pepper, and fresh parsley.

Ingredients

Scale

Ham and Cheese Cups

  • Cooking spray
  • 12 slices of ham
  • 1 1/2 cups shredded cheddar cheese
  • 12 large eggs
  • Kosher salt, to taste
  • Freshly ground pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat oven: Set your oven to 400 degrees Fahrenheit (204 degrees Celsius) to prepare for baking the egg cups.
  2. Prepare muffin pan: Spray the cups of a 12-cup muffin pan with cooking spray to prevent sticking and set the pan aside.
  3. Line cups with ham: Place one slice of ham into each muffin cup, trimming the slices if they are too large to fit neatly inside the cups.
  4. Add cheese: Spoon about 1 tablespoon of shredded cheddar cheese on top of the ham in each cup, distributing it evenly.
  5. Crack eggs: Carefully crack one large egg into each ham-lined muffin cup, making sure the yolk remains intact.
  6. Season: Sprinkle each cup with kosher salt and freshly ground black pepper according to your taste preferences.
  7. Bake: Place the muffin pan in the oven and bake for 12 to 15 minutes. Bake for 12 minutes if you prefer a runny yolk, or up to 15 minutes for a firmer yolk.
  8. Garnish and serve: Remove the pan from the oven, sprinkle the baked ham and egg cups with chopped fresh parsley for a burst of color and flavor. Use a large spoon to carefully lift each cup from the pan and serve warm.

Notes

  • Cooking times can be adjusted based on your yolk preference—less time for runny yolks, more for firm.
  • You can substitute cheddar cheese with other kinds such as mozzarella or pepper jack for flavor variation.
  • If you do not have kosher salt, regular table salt can be used as a substitute.
  • Ham slices can be trimmed or replaced with Canadian bacon for a leaner option.
  • These cups are perfect for meal prep and can be refrigerated and reheated for quick breakfasts.
