Ingredients
Scale
Soup Base
- 1 lb chicken breast
- 4 cups chicken broth
- 2 medium carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
Seasoning
- Juice of 2 large lemons (about 4 tablespoons)
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prepare the Vegetables: Dice the carrots and celery into small pieces and mince the garlic to ensure they will cook evenly and release their flavors into the broth.
- Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned to develop the soup’s aromatic base.
- Cook Chicken and Vegetables: Add the chicken breast to the pot along with the diced carrots and celery. Pour in the chicken broth and bring the mixture to a gentle simmer. Cook until the chicken is fully cooked and the vegetables are tender, about 20-25 minutes.
- Shred Chicken: Remove the cooked chicken breast from the pot and shred it using two forks or your hands, then return the shredded chicken to the soup pot.
- Add Lemon Juice and Season: Stir in the fresh lemon juice and season the soup with salt and freshly ground black pepper to taste. Let the soup simmer for another 5 minutes to blend the flavors well.
- Serve: Ladle the warm lemon chicken soup into bowls and serve immediately for a fresh, comforting meal.
Notes
- Use fresh lemon juice for the best flavor; bottled lemon juice can alter the taste.
- You can add fresh herbs such as parsley or dill for additional freshness.
- For a thicker soup, add cooked rice or small pasta like orzo after shredding the chicken and let them cook until tender.
- Adjust the amount of lemon juice to taste for a more or less acidic flavor.
