  • 1 cup (150g/5.3 oz.) all-purpose flour, scoop & leveled
  • 1 tsp baking powder
  • 2 Tbsp chia seeds

Instructions

  1. Preheat Oven: Set your oven to 320ºF (160ºC) and line a large flat baking tray with parchment paper. This ensures even baking and prevents sticking.
  2. Mix Wet Ingredients: In a large mixing bowl, combine peanut butter, honey, milk, olive oil, and vanilla extract. Whisk together until the mixture is smooth and well blended.
  3. Add Dry Ingredients: Add the all-purpose flour, baking powder, and chia seeds to the wet ingredients. Stir with a wooden spoon until a soft dough forms, making sure all ingredients are incorporated.
  4. Shape Cookies: Scoop about one heaping tablespoon of dough, roll it into a smooth ball, place it on the prepared baking tray, and gently press down to form a domed cookie. Repeat for the remaining dough, leaving space between cookies for spreading.
  5. Bake: Bake in the preheated oven for 12-15 minutes or until cookies are lightly golden and slightly cracked on top, indicating they are cooked through.
  6. Cool: Allow the cookies to cool on the tray for 3 minutes before transferring them to a wire rack to cool completely. This prevents them from breaking while warm.
