- 1/2 cup tapioca flour/starch
- 2 oz fresh baby spinach leaves
- 1 – 1 1/8 cup water
- 1/3 tsp salt
Instructions
- Prepare the Batter: Process all ingredients in your food processor or blender until the batter is smooth. Use 1 cup of water for thicker/smaller tortillas or 1 1/8 cup for thinner/bigger tortillas.
- Cook the Tortillas: Pour about 1/3 cup of batter into a non-stick skillet over low-medium heat. Cook for 2 minutes, flip, and cook for another minute.
