Graham Cracker Crumbs:

Instructions
- Baking Instructions – Preheat oven to 325°F (160°C).
- In a medium bowl, mix graham cracker crumbs with melted unsalted butter. Press into a 9-inch springform pan and bake for 10 minutes.
- In a large bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then blend in sour cream, cinnamon, and vanilla extract.
- In a small bowl, combine brown sugar and cinnamon for swirls.
- Pour half of the filling over the crust, add half of the cinnamon-sugar, swirl, then repeat with remaining filling and topping.
- Bake for about 60 minutes until edges are set but the center is slightly jiggly.
- Turn off the oven, cool cheesecake with the door ajar for an hour, then refrigerate for at least 4 hours.
