Graham Cracker Crumbs:

  • 1 cup

Unsalted Butter:

  • 1/2 cup

Cream Cheese:

  • 24 oz

Granulated Sugar:

  • 1 cup

Eggs:

  • 4 large

Sour Cream:

  • 1 cup

Ground Cinnamon:

  • 2 teaspoon (for filling) + 2 teaspoon (for topping)

Pure Vanilla Extract:

  • 2 teaspoon

Brown Sugar:

  • 1/2 cup (for filling) + 1/2 cup (for topping)

Instructions

  1. Baking Instructions – Preheat oven to 325°F (160°C).
  2. In a medium bowl, mix graham cracker crumbs with melted unsalted butter. Press into a 9-inch springform pan and bake for 10 minutes.
  3. In a large bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then blend in sour cream, cinnamon, and vanilla extract.
  4. In a small bowl, combine brown sugar and cinnamon for swirls.
  5. Pour half of the filling over the crust, add half of the cinnamon-sugar, swirl, then repeat with remaining filling and topping.
  6. Bake for about 60 minutes until edges are set but the center is slightly jiggly.
  7. Turn off the oven, cool cheesecake with the door ajar for an hour, then refrigerate for at least 4 hours.
