Main Slice:

  • 250 g plain sweet biscuits, crushed
  • 125 g unsalted butter
  • 120 g caster sugar
  • 30 g unsweetened cocoa powder
  • 60 ml milk

Icing:

  • 90 g desiccated coconut, divided
  • 180 g icing sugar

Instructions

  1. Prepare Base: Line a square baking tin with baking paper, leaving overhang for easy removal.
  2. In a saucepan over low heat, melt the butter with caster sugar, cocoa powder, and milk, stirring until smooth.

  3. Mix Ingredients: Place the crushed biscuits and half of the desiccated coconut into a large mixing bowl. Pour the warm chocolate mixture over the biscuits and mix until evenly combined.
  4. Press Into Tin: Press the mixture firmly into the prepared tin and smooth the surface. Refrigerate for about 30 minutes until firm.
  5. Prepare Icing: In a bowl, mix icing sugar with the remaining coconut and a small amount of melted butter and milk until spreadable.
  6. Add Icing: Spread the icing evenly over the chilled base.
  7. Chill and Serve: Return to the fridge until fully set, then slice and serve.
