- 1 lb ground beef or turkey (or plant-based alternative)
- 4 medium potatoes, thinly sliced
- 2 carrots, peeled and sliced
- 1 bell pepper, chopped
- 1 small onion, thinly sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme or Italian seasoning
- Salt and pepper to taste
- Optional: shredded cheese or barbecue sauce for topping
- Heavy-duty aluminum foil
Instructions
- Preheat oven to 400°F (200°C) or heat grill to medium.
- In a large bowl, toss potatoes, carrots, bell pepper, and onion with olive oil, garlic powder, herbs, salt, and pepper.
- Divide the ground meat into 4 equal portions and flatten each slightly.
- Place each meat portion onto a large sheet of foil.
- Top each with a generous portion of the seasoned vegetable mixture.
- Seal each foil packet by folding and crimping the edges tightly to prevent leaks.
- Bake on a sheet pan or grill over indirect heat for 35–40 minutes, until the meat is fully cooked and vegetables are tender.
- Carefully open the foil packets, add shredded cheese or barbecue sauce if desired, and serve hot.
