Description

Easy and customizable foil packet meals made with seasoned ground meat and a medley of vegetables. Perfect for grilling, baking, or campfire cooking with minimal cleanup.


Ingredients

  • 1 lb ground beef or turkey (or plant-based alternative)
  • 4 medium potatoes, thinly sliced
  • 2 carrots, peeled and sliced
  • 1 bell pepper, chopped
  • 1 small onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme or Italian seasoning
  • Salt and pepper to taste
  • Optional: shredded cheese or barbecue sauce for topping
  • Heavy-duty aluminum foil

Instructions

  1. Preheat oven to 400°F (200°C) or heat grill to medium.
  2. In a large bowl, toss potatoes, carrots, bell pepper, and onion with olive oil, garlic powder, herbs, salt, and pepper.
  3. Divide the ground meat into 4 equal portions and flatten each slightly.
  4. Place each meat portion onto a large sheet of foil.
  5. Top each with a generous portion of the seasoned vegetable mixture.
  6. Seal each foil packet by folding and crimping the edges tightly to prevent leaks.
  7. Bake on a sheet pan or grill over indirect heat for 35–40 minutes, until the meat is fully cooked and vegetables are tender.
  8. Carefully open the foil packets, add shredded cheese or barbecue sauce if desired, and serve hot.
