Instructions

  1. Boil the Eggs: Place the eggs in a saucepan and cover them with cold water by about an inch. Bring the water to a gentle boil over medium heat. Once boiling, cover the saucepan and remove it from heat. Let the eggs sit for 10–12 minutes. Drain the hot water and immediately transfer the eggs to a bowl of ice water to cool quickly, preventing the yolks from developing a gray-green ring.
  2. Prepare the Yolks: Peel the cooled eggs carefully and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl. Mash the yolks with a fork until they’re crumbly and smooth.
  3. Make the Filling: To the mashed yolks, add mayonnaise, Dijon mustard, white vinegar, garlic powder, salt, and pepper. Mix thoroughly until smooth and creamy, whisking continuously to avoid lumps for a silky texture. Add a few drops of green food coloring and mix until you achieve a vibrant Christmas tree green color.
