Soup Base
- 2 tbsp Unsalted Butter
- 2 Garlic Cloves, minced
- 1 Spanish Cooking Onion, finely chopped
- Salt and Pepper, to taste
- 8 cups Chicken Stock
- 2 Bay Leaves
- 1/4 cup Dill, finely chopped, plus more for garnish, reserve stems
Vegetables and Noodles
- 2 Carrots, cut into 1/2 inch pieces
- 2 Celery Sticks, cut into 1/2 inch pieces
- 150 g Dried Egg Noodles
Additional Ingredients
- 3 cups Shredded Roasted Chicken
- 1/4 cup Dry Sherry
Instructions
- Melt Butter and Sauté Aromatics: In a large pot or Dutch oven, melt the unsalted butter over medium heat. Add the minced garlic and finely chopped onion, seasoning with salt and pepper. Cook gently until the onion is softened and translucent, about 5 to 7 minutes, taking care not to brown the garlic or onion.
- Add Broth and Herbs: Pour in the chicken stock along with the bay leaves and the reserved dill stems. Bring the mixture to a vigorous boil over high heat.
- Add Vegetables and Noodles: Add the chopped carrots, celery, and dried egg noodles to the boiling broth. Reduce heat to medium-high and cook uncovered until the noodles are al dente, about 7 to 10 minutes depending on the pasta package instructions.
- Incorporate Chicken and Sherry: Stir in the shredded roasted chicken and dry sherry. Simmer gently just until the chicken is heated through, about 1 to 2 minutes.
- Finish and Season: Remove and discard the bay leaves and dill stems. Stir in the finely chopped dill, then taste and adjust seasoning with additional salt and pepper as needed. Garnish with extra dill before serving.

- Use good quality chicken stock for the richest flavor.
- Shredded roasted chicken adds depth but you can substitute with cooked chicken breast if preferred.
- For a gluten-free version, substitute egg noodles with gluten-free pasta.
- Fresh dill is key to the bright herbal flavor; do not omit.
