- Combine Dry Ingredients: Add all dry ingredients except the golden sultanas into a large mixing bowl. Thoroughly mix together to distribute the spices, nuts, and seeds evenly throughout the oats.
- Add Coconut Oil: Pour the 2/3 cup of coconut oil into the dry ingredient mix. Stir well to ensure the oil coats all components evenly, helping with browning and flavor.
- Add Honey: Incorporate the honey into the mixture. Mix thoroughly to ensure the honey binds the ingredients, contributing sweetness and helping to clump the granola.
- First Bake: Spread the mixture evenly on a baking tray lined with parchment paper. Preheat your oven to 350°F (175°C) then bake the granola for 10 minutes, allowing it to start crisping and browning.
- Add Sultanas and Second Bake: Remove the tray from the oven, add the golden sultanas, and toss the mixture to incorporate them evenly. Return the tray to the oven and bake for an additional 10 minutes to finish the granola.
- Cool the Granola: Carefully remove the parchment paper with granola from the baking tray and place it on a cooling rack. Allow the granola to cool completely to room temperature, which will help it crisp up nicely.
