For the rolls:
- 1/2 cup pineapple juice (room temperature)
- 1/4 cup milk (room temperature)
- 1/4 cup warm water (about 110°F/43°C)
- 2 1/4 tsp active dry yeast
- 1/3 cup brown sugar
- 2 tbsp melted unsalted butter
- 1 tsp vanilla extract
- 1 large egg
- 3 cups all-purpose flour
- 3/4 tsp salt
For brushing:
- Additional melted butter
Instructions
- In a large bowl or stand mixer, combine warm water and yeast. Let sit for 5–10 minutes until foamy.
- Stir in pineapple juice, milk, brown sugar, melted butter, vanilla, and egg. Mix until well combined.
- Gradually add flour and salt, kneading for 6–8 minutes until a soft, slightly tacky dough forms.
- Cover the bowl and let dough rise in a warm spot for 1 hour, or until doubled in size.
- Punch down dough and divide into 12 equal pieces. Shape into smooth balls and place in a greased 9×13-inch baking dish.
- Cover and let rise again for 30–40 minutes until puffy.
- Preheat oven to 350°F (175°C). Bake rolls for 20–25 minutes until golden brown on top.
- Remove from oven and brush with melted butter while warm. Cool slightly before serving.
Notes
- For best results, make sure all ingredients are at room temperature.
- You can freeze these rolls for later use; just reheat before serving.
