Cheesecake Filling:
- 8 oz Cream Cheese (softened)
- 1/2 cup Granulated Sugar
- 2 tbsp Matcha Powder
- 1 cup Heavy Cream (chilled)
Mochi Dough:
- 1 cup Glutinous Rice Flour
- 1/4 cup Cornstarch
- 1/2 cup Whole Milk
- 2 tbsp Unsalted Butter (melted)
- 1/4 cup Cooked Glutinous Rice Flour/Cornstarch (for dusting)
- 2 tbsp Optional Matcha Powder (for dusting)
Instructions
- Preparation: Blend cream cheese and sugar, add matcha and heavy cream, pipe dollops and freeze. Mix rice flour, cornstarch, sugar, milk, steam, add butter. Knead into smooth dough.
- Assembling: Divide dough, flatten, place cheesecake ball, seal, dust with flour, refrigerate, dust with matcha.
