Description

This Honey-Glazed Corn Casserole is a comforting, easy-to-make side dish blending the sweetness of corn with a luscious honey glaze. Perfectly moist and flavorful, it’s a delightful accompaniment for holiday meals or casual dinners alike.

Ingredients

Scale

Corn Casserole

  • 1 can whole kernel corn, drained
  • 1 can cream-style corn
  • 1 box corn muffin mix (8.5 oz)
  • 1 cup sour cream
  • ½ cup melted butter
  • 2 large eggs
  • 3 tbsp honey (divided)
  • ½ tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the corn muffin mix, drained whole kernel corn, cream-style corn, sour cream, melted butter, eggs, salt, and 2 tablespoons of honey. Stir gently until just combined, being careful not to overmix to keep the casserole tender.
  3. Bake: Pour the batter into the prepared baking dish and bake uncovered for 45 to 50 minutes. The casserole should be golden brown on top and set in the center when done.
  4. Glaze: Five minutes before the baking time is complete, drizzle the remaining 1 tablespoon of honey over the top to create a sweet glaze.
  5. Rest and Serve: Allow the casserole to rest for 5 to 10 minutes after removing it from the oven to let it set before serving. This enhances its texture and flavor.

Notes

  • Add shredded cheese such as cheddar for extra savory flavor.
  • Try using maple syrup instead of honey for a warm, fall-inspired twist.
  • Avoid overmixing the batter to maintain a light, fluffy texture.
