Ingredients
Scale
Main Ingredients
- 1 can whole kernel corn, drained
- 1 can cream-style corn
- 1 box corn muffin mix (8.5 oz)
- 1 cup sour cream
- ½ cup melted butter
- 2 large eggs
- 3 tbsp honey (divided)
- ½ tsp salt
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish thoroughly to prevent sticking.
- Mix Ingredients: In a large mixing bowl, combine the corn muffin mix, whole kernel corn, cream-style corn, sour cream, melted butter, eggs, salt, and 2 tablespoons of honey. Mix gently until just combined to avoid overmixing, which can affect texture.
- Bake: Pour the batter evenly into the prepared dish and place it in the preheated oven. Bake for 45 to 50 minutes until the casserole is golden on top and set in the center.
- Add Honey Glaze: About 5 minutes before the baking time is complete, drizzle the remaining tablespoon of honey evenly over the top of the casserole to add a sweet glaze.
- Rest and Serve: Remove the casserole from the oven and let it rest for 5 to 10 minutes before serving to allow it to set and cool slightly for easier serving.
Notes
- Add shredded cheese such as cheddar or Monterey Jack for extra flavor and richness.
- Substitute maple syrup for honey to give the dish a classic fall twist.
- Be careful not to overmix the batter to maintain a light, tender texture in the casserole.
