  • 500 g Strong White Bread Flour
  • 7 g Fast-action Dried Yeast
  • 1 tsp Fine Sea Salt
  • 1 large Free-range Egg Yolk
  • 50 g Runny Honey
  • 50 ml Olive Oil

Filling:

  • 200 g Raspberries
  • 300 ml Whipping Cream
  • 50 g Icing Sugar

Instructions

  1. Dough Preparation – Warm the milk until lukewarm. In a stand mixer, combine flour, yeast, and salt. Blend honey and olive oil into the warm milk, pour into the flour mixture, knead until smooth, let rise.
  2. Filling and Assembly – Blend raspberries into a purée, whip cream with icing sugar and raspberry purée, fold in crushed raspberries, fill the buns, and dust with icing sugar.
