Dough:
- 250 ml Whole Milk
- 500 g Strong White Bread Flour
- 7 g Fast-action Dried Yeast
- 1 tsp Fine Sea Salt
- 1 large Free-range Egg Yolk
- 50 g Runny Honey
- 50 ml Olive Oil
Filling:
- 200 g Raspberries
- 300 ml Whipping Cream
- 50 g Icing Sugar
Instructions
- Dough Preparation – Warm the milk until lukewarm. In a stand mixer, combine flour, yeast, and salt. Blend honey and olive oil into the warm milk, pour into the flour mixture, knead until smooth, let rise.
- Filling and Assembly – Blend raspberries into a purée, whip cream with icing sugar and raspberry purée, fold in crushed raspberries, fill the buns, and dust with icing sugar.

- You can customize the filling by using different berries or adding a hint of lemon zest.
