Chia Pudding

  • 4 tbsp chia seeds
  • 1 cup almond milk
  • Zest of 3 key limes (or 1 regular lime)
  • 2 tbsp maple syrup

Key Lime Pudding Layer

  • 1/2 cup raw cashews, soaked in hot water for 1 hour then drained
  • 6 tbsp coconut milk (full-fat from a can)
  • 2 tbsp maple syrup
  • 1/4 cup key lime juice (or lime juice)
  • Zest of 2 key limes (or 1 regular lime)
  • 1/2 tsp matcha powder for colour (optional)

Instructions

  1. Prepare the chia pudding: Mix the chia seeds, almond milk, key lime zest, maple syrup, and vanilla extract together in a bowl. Whisk for 30 seconds until everything is well combined.
  2. Chill to set: Place the chia pudding mixture in the fridge and allow it to firm up for at least 2 hours or preferably overnight for a better pudding-like texture.
  3. Make the key lime mousse: Add the soaked cashews, coconut milk, maple syrup, lime juice, lime zest, and matcha powder (if using) to a blender or food processor. Blend until completely smooth, scraping down the sides as needed to ensure even blending.
  4. Assemble the dessert: Spoon the chilled chia pudding evenly into 4 small jars or serving cups. Pour the key lime mousse mixture on top of each chia pudding layer.
  5. Final chilling: Place the assembled pudding cups back into the fridge and let them set for at least 2 hours before serving to allow flavors to meld and textures to firm up.

Notes

  • Allow the chia pudding to sit for at least 2 hours so it absorbs the liquid and thickens to a pudding-like consistency.
  • If key limes are unavailable, regular limes can be substituted, although key limes offer a unique and delicious flavor.
