- 1 cup unsalted butter, softened
- 2 1/2 cups granulated sugar
- 6 large eggs
- 3 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup whole milk
- 1/4 cup key lime juice
- 1 tbsp key lime zest
- 1 tsp vanilla extract
- A few drops of green food coloring (optional)
- 1 cup powdered sugar
- 2–3 tbsp key lime juice
- Zest of 1 key lime
Instructions
- Preheat oven to 325°F (163°C). Grease and flour a bundt or loaf pan.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- In another bowl, sift together flour, baking powder, and salt.
- In a small bowl, combine milk, lime juice, zest, and vanilla.
- Alternately add dry and wet ingredients to the creamed mixture, beginning and ending with the dry.
- Stir in green food coloring, if using.
- Pour batter into prepared pan and smooth the top.
- Bake for 70–80 minutes, or until a toothpick inserted comes out clean.
- Let cool in pan for 10 minutes, then turn out onto a wire rack.
- Mix glaze ingredients and drizzle over cooled cake.
Notes
- Use freshly squeezed key lime juice for the best flavor.
- Adjust the food coloring to your desired shade of green.
- Make sure the cake is completely cool before glazing to prevent the glaze from melting.
- Store in an airtight container for up to 3 days at room temperature or refrigerate for longer freshness.
