Description

Key West Grilled Chicken with Tropical Citrus Marinade is a delightful recipe that brings a taste of the tropics to your dinner table. The succulent chicken breasts are marinated in a zesty blend of lime, orange, and pineapple juices, along with a hint of honey and spices, then grilled to perfection. This dish is a perfect balance of sweet and tangy flavors, making it a crowd-pleaser for any occasion.

Ingredients

Scale

For the Marinade:

  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1/4 cup pineapple juice
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

For Grilled Chicken:

  • 4 boneless, skinless chicken breasts
  • Fresh cilantro, for garnish

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together lime juice, orange juice, pineapple juice, olive oil, honey, minced garlic, grated ginger, salt, black pepper, and red pepper flakes (if using).
  2. Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for more flavor.
  3. Preheat the Grill: Heat your grill to medium-high heat.
  4. Remove Chicken from Marinade: Take the chicken out of the marinade and let any excess marinade drip off. Discard the remaining marinade.
  5. Grill the Chicken: Place the chicken breasts on the preheated grill. Cook for about 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks.
  6. Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for 5 minutes. This allows the juices to redistribute, making it more tender.
  7. Garnish and Serve: Transfer the chicken to a serving platter and garnish with fresh cilantro for a pop of color.
