Description

A hot, cheesy Korean side dish featuring sweet corn mixed with mayonnaise and optional spice, topped with melty mozzarella and broiled to golden perfection. Perfect as a companion to Korean BBQ or as a crowd-pleasing appetizer.


Ingredients

  • 2 cups canned or frozen sweet corn (drained if canned)
  • 1/4 cup mayonnaise
  • 1 tbsp sugar
  • 1 tbsp gochujang (Korean chili paste) or 1/2 tsp chili flakes (optional)
  • 1/2 cup shredded mozzarella cheese
  • 1 green onion, finely chopped
  • Pinch of salt and pepper
  • Butter for greasing skillet

Instructions

  1. Preheat oven broiler or toaster oven to high.
  2. In a bowl, mix corn, mayonnaise, sugar, gochujang (or chili flakes if using), salt, pepper, and half of the chopped green onion.
  3. Grease a small oven-safe skillet or baking dish with butter and pour in the corn mixture.
  4. Sprinkle shredded mozzarella evenly on top.
  5. Broil for 2–4 minutes, or until the cheese is bubbly and golden brown.
  6. Garnish with remaining green onion and serve hot immediately.

Notes

  • Use canned or frozen corn for convenience, but fresh corn can be used when in season.
  • Adjust the level of spice by varying the amount of gochujang or chili flakes.
  • Serve in the same skillet for a sizzling presentation.
