Description

- 2 cups canned or frozen sweet corn (drained if canned)
- 1/4 cup mayonnaise
- 1 tbsp sugar
- 1 tbsp gochujang (Korean chili paste) or 1/2 tsp chili flakes (optional)
- 1/2 cup shredded mozzarella cheese
- 1 green onion, finely chopped
- Pinch of salt and pepper
- Butter for greasing skillet
Instructions
- Preheat oven broiler or toaster oven to high.
- In a bowl, mix corn, mayonnaise, sugar, gochujang (or chili flakes if using), salt, pepper, and half of the chopped green onion.
- Grease a small oven-safe skillet or baking dish with butter and pour in the corn mixture.
- Sprinkle shredded mozzarella evenly on top.
- Broil for 2–4 minutes, or until the cheese is bubbly and golden brown.
- Garnish with remaining green onion and serve hot immediately.
Notes
- Use canned or frozen corn for convenience, but fresh corn can be used when in season.
- Adjust the level of spice by varying the amount of gochujang or chili flakes.
- Serve in the same skillet for a sizzling presentation.
