Gelatin Layers
- 1 (3 oz) box green gelatin (lime or similar)
- 1 (3 oz) box orange gelatin
- 1 (3 oz) box red gelatin (strawberry or cherry)
- 3 cups boiling water (divided)
- 3 cups cold water (divided)
Cream Cheese Center
- 1 (8 oz) package cream cheese, softened
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
Instructions
- Prepare Green Gelatin Layer: Dissolve the green gelatin in 1 cup boiling water, stirring until fully dissolved. Add 1 cup cold water and stir to combine. Pour into the graham cracker crust as the first layer. Refrigerate for at least 30 minutes, or until set.
- Make Cream Cheese Layer: While the green layer sets, use a mixing bowl to beat the softened cream cheese with the sugar and vanilla extract until smooth and fluffy. Once the green gelatin is set, carefully spread the cream cheese mixture evenly over the top. Return the pie to the fridge and chill for 20 minutes to help the cream layer firm up.
- Prepare Orange Gelatin Layer: Dissolve the orange gelatin in 1 cup boiling water. Stir until completely dissolved, then add 1 cup cold water. Gently pour this mixture over the chilled cream cheese layer (pour slowly over the back of a spoon to prevent disturbing the cream layer). Refrigerate until firm, about 30–45 minutes.
- Prepare Red Gelatin Layer: Repeat the gelatin process with the red gelatin: dissolve in 1 cup boiling water, stir until melted, then add 1 cup cold water. Carefully pour the mixture over the set orange gelatin layer. Chill the entire pie for at least 2 hours, or until all layers are fully set and firm.
- To Serve: For neat slices, use a knife dipped in warm water and wiped dry between each cut. Serve chilled and enjoy the colorful layers!
Notes
- Allow each layer to fully set before adding the next to prevent colors from bleeding together.
- Pour gelatin mixtures slowly over the cream cheese layer to avoid disturbing it.
