- 1 egg
- 2 tbsp sugar (optional)
- 1/4 tsp salt
- 1/2 tsp vanilla extract (optional)
- 1 cup all-purpose flour (plus more for dusting)
- For serving:
- 1/2 cup sour cream or Greek yogurt
- 1/3 cup berry jam or puree (e.g., strawberry or raspberry)
- Optional: powdered sugar or fresh berries for garnish
Instructions
- In a large bowl, combine cottage cheese, egg, sugar, salt, and vanilla. Mix until smooth.
- Gradually add flour and mix until a soft, slightly sticky dough forms.
- Dust a surface with flour. Roll the dough into ropes and cut into bite-sized pieces. Lightly press each with a fork.
- Bring a large pot of salted water to a boil. Add dumplings in batches and cook until they float (about 2–3 minutes). Remove with a slotted spoon.
- Serve warm, topped with sour cream or yogurt and berry jam. Garnish with powdered sugar or fresh berries if desired.
Notes
- Drain cottage cheese well to avoid overly wet dough.
- Ricotta can be used as a substitute for farmer’s cheese.
- Freeze dumplings before boiling for a quick meal later.
