Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, matcha powder, baking powder, baking soda, and salt.
- In another bowl, beat eggs with sugar until light. Mix in milk, oil, yogurt, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir just until combined—do not overmix.
- Divide the batter evenly among muffin cups, filling each about 3/4 full.
- Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool on a wire rack before serving. Dust with extra matcha for a bold finish if desired.
