Description

Ingredients

  • 3/4 cup buttermilk
  • 1 large egg

  • 1/2 cup white chocolate, melted
  • 1 teaspoon matcha powder
  • 1 scoop matcha ice cream
  • 2 tablespoons chopped pistachios
  • 1/4 cup mixed fresh fruit (strawberries, grapes, blueberries)
  • 1/4 cup mixed dried fruit and granola

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together buttermilk, egg, and melted butter. Pour into dry ingredients and stir until just combined.
  3. Heat a non-stick pan over medium heat. Pour batter to form pancakes and cook until bubbles form on top, then flip and cook until golden brown.
  4. For the glaze, stir matcha powder into melted white chocolate until smooth. Drizzle over pancakes.
  5. Top with a scoop of matcha ice cream, chopped pistachios, fresh fruit, and granola mixture.
